Vegetarian Fare: Split Pea Soup

This is a crock pot recipe and so super easy!


In your crockpot, dump
1 bag of dry split peas
some chopped carrots (sometimes, I add sweet potato, too)
veggie bullion or broth

Fill the crock pot with water - about 2" over the peas and carrots.
Turn on low for 8hrs, or high for 4 hrs

We ate ours with grapes and butter crackers.

    This looks really yummy!!! As a vegetarian I am often asked, "so what DO you eat if you don't eat meat"?
    My answer is always the same, everything else!!!

  2. Anna, this is the question, isn't it? My husband isn't vegetarian, but is asked this question by the guys at work. He's always explaining that there is a vegetarian version of practically everything!
